Rainbow Sprinkle Cookies Recipe
Its Nearly Easter so Lil Cupcake and I have been making Simple Little Rainbow Sprinkle Cookies. I thought you guys may like the recipe as they are so simple and sooooo Yummy.So here you go. Do let me know how you got on
Rainbow Sprinkle Cookies
Makes Approx 18
115g (4oz) unsalted butter, softened
75g (23/4 oz) Icing Sugar
1tbsp Golden Syrup
1 Medium Egg YOLK
a few drops of flavoring ( I used Vanilla)
225g (8oz) plain flour, sieved
1tsp baking powder
Preheat your oven to 180C/Gas mark4. Butter your Muffin tins
Cream the Butter, Icing sugar and golden Syrup together until pale and fluffy,. Gradully beat the Egg yolk and vanilla until well mixed.
Sift the flour and baking powder together, then stir this into th emixture until it resembles bread crumbs.
This is the bit Lil Cupcake likes as its the Messy bit.
Turn the dough out onto a floured surface and knead tll smooth. Wrap in cling film and pop in the fridge for 30 mins.
Sprinkle Rainbow Sprinkles in to the Tin and set to one side til your dough is ready.
Once ready roll the dough into a ball and pop in the Muffin tin. Roll them around the Muffin tin to pick up the sprinkles.
The cookies will spread a little
Bake for approximately 12 mins or until golden brown light.
Let them cool and then munch
